So it's Monday lovelies.
This means I've got chores and cooking dinner on the agenda.
I'm pretty big on finding ways to cook once, eat twice. I've noticed there are lots of yummy dishes that just beg to be eaten again as leftovers. Take this delicious warm penne pasta served hot with warm french bread on the first night and cold over a bed of mixed greens the next night. The chicken is technically leftover already from a rotisserie chicken from the grocery store so you really get three nights out of it.
DAY ONE
Ingredients
1 package of penne pasta cooked al dente
1 package of frozen peas (thawed)
boneless skinless cooked chicken (I used a rotisserie chicken)
1 red onion sliced
half & half
butter
parmesan cheese
1 large can of italian style tomatoes
white wine
Recipe:
glaze a saute pan with olive oil and sweat the onion
Deglaze the pan with white wine
Add chicken, tomatoes, and peas and allow to simmer until warm.
Slowly stir in half & half and add in a 1 tbsp of butter
Slowly add in a cup of finely grated parmesan cheese
add a pinch of salt and pepper to taste
DAY TWO
Recipe:
take the above leftover pasta and re-heat on the stovetop adding more white wine if neccesary
serve over a bed of mixed greens
add fresh sliced red onion and fresh chopped tomato
