Weekend Dinner idea? Done.
Black Bean and Corn Quesadillas. Leftovers on the second night turned into nachos. Only one night of prep. Done. Warning, this is a vegetarian recipe.
Om, Yum. Right?
Combine the following in a bowl:
two jars of black beans drained
1 1/2 jars of diced tomatoes with jalapenos drained
two cans of mexican style corn (fiesta corn)
Add a healthy sprinkle of cheddar/jack cheese to a tortilla shell. Scoop a cup of the filing mixture on top of the cheese and add a second tortilla on top and grill slowly (5-10) minutes on med-low heat
top with sour cream, diced red onion and tomatoes
sprinkle with cilantro
Line a baking sheet with aluminum foil
Add a good amount of shredded cheddar/jack cheese
scoop the mixture in dollops on top of the cheese
Add diced red onion
Broil on high for a few mintues (watch it, ovens will very)
top with sour cream and cilantro
