MANDARIN ORANGE PENNE PASTA
WITH ORANGE PEPPERS AND PEAS IN A CREAMY PARMESAN WINE SAUCE
Okay, so both my mom and my mother in law are professionals at tossing in some random ingredients with pasta and creating an amazing meal. Now that I'm a mom I figured I better start practicing. Here's another one of my creations.
*Cook penne pasta according to the directions on the box, set aside*
*saute diced orange peppers in 1 tbsp of butter on the stove top*
*de-glaze with white wine*
*add peas and allow to simmer for 5 minutes*
*turn down heat to low*
*add in a cup of heavy whipping cream or half and half*
*add in an entire can of mandarin oranges, including the juice*
*stir in penne pasta*
*add fresh grated parmesan cheese to taste*
*salt and pepper to taste*
