Matt made the most delicious dinner the other night. Barbecue chicken tacos. He coated the chicken with Sweet Baby Ray's barbecue sauce and cooked them on the grill. He sliced an onion, red pepper, orange pepper, and, yellow pepper and placed those on the grill as well. He also grilled a can of pineapple rings. Lastly he placed the flour tortillas on the grill for just a minute after everything else was cooked to give them some heat and char marks. After putting everything in the tortilla, I topped with more barbecue sauce and a bit of feta. The #allergykids loved it and ate everything minus the feta cheese.
Are y'all still grilling out? We tend to do it the most in the fall when it's nice and cool at night. Too hot in the summer to stand by a grill.

ReplyDeleteLooks delicious - will have to try this - we are still grilling, and have done so all summer, but I'm in Boston, so not as hot, will grill until we have to shovel a path in the snow to reach the grill...
