Barbecue Chicken Pizza

If I'm being completely honest I haven't been cooking much lately.  My meal planning posts are more of a round-up of my top pinterest recipe picks for the week than an actual guide to my family's eating.  I'm trying to change that by getting back to what got me started cooking in the first place.  Basic, simple, yummy meals that I can easily tackle in less than 30 minutes and without much thought.

One of my first meals I made regularly was barbecue chicken pizza made with leftover rotisserie chicken.  Amazingly tasty and super quick to whip up.

Barbecue Chicken Pizza

Heat oven to 450'
Pre-made Pizza crust
Drizzle a tbsp of olive oil and spread over the crust
Spread 3 helping tbsp of Barbecue Sauce over the crust
Sprinkle a layer of shredded Italian blend or mozzarella cheese
Top with cooked shredded Barbecue Chicken
*I use rotisserie chicken tossed with store bought Barbecue Sauce*
Add a layer of either shredded sharp cheddar or the colby/jack mix
Add thinly sliced red onion
Top with fresh cilantro
Turn oven down to 425'
Place pizza directly on the oven rack and bake for 8-11 minutes

I use the exact same recipe without the cheese for Wells and Tagg because they're allergic to dairy.  There is so much flavor in the barbecue sauce that they don't know what they're missing and I'm not big on vegan cheese.  Or they contain rice flour, which Wells can't have.

What are your basic meals?  What is the one go-to you always come back to when you're in a cooking rut?

  1. Yum! I know what we're having for dinner now.

  2. This is one of my simple and a crowd pleaser for sure!!

  3. Yum! This is a regular for me...and thai chicken pizza! Same ingredients, different sauce and shaved carrots!

  4. Yum - we love buffalo chicken pizza too! I'm a big fan of pizza nights. So easy and great for using up random things in the fridge. Some of my go-to dinner ideas are the simple ones - turkey tacos/taco salad, turkey burgers of various styles (buffalo, thai, tex-mex), stir frys over brown rice. I'm with you - whatever is on the table quickly is sometimes best!

  5. *bbq chicken pizza that is. but buffalo is good too. :)

  6. Looks amazing!! We've subbed in bbq sauce on our veggie version of hawaiian pizza before and now that's all my little guy wants on his pizza.

  7. This looks so yum! Adding to my list to make!

  8. My new thing is crock-pot freezer meals. I spend a Saturday or a Sunday, or both depending on what and how much I am making, and put together meals for the next month or two months. I usually will google "crock-pot freezer meals" and find some meals I like and then double the recipe so I can have that meal at least twice. I put all the ingredients into a Ziploc bag and freeze. The night before I am going to cook something I pull it out to defrost some in the fridge and then pop it in the crock in the morning. When I get home at 6 I make sides (rice, pasta, cous cous, some kind of starch and steam a veggie). I bet you could find some recipes that are allergy friendly. Its can be a lot of time putting all the ingredients together, but then dinner is taken care of for the month and I can get a home cooked meal on the table in 30 min every night during the week. I leave weekends unplanned for spur of the moment meals. This meal planning may not work for every family, but its drastically improved my evenings and finding the energy to get dinner together with a hungry little one clinging to my thigh.

  9. This looks divine! Youre inspiring me to cook :) xo Nancy
