Grilled Cheese with Bacon

One of my all-time favorites is grilled cheese.  While I'm not one to turn down a Kraft slice on white bread, M and I love to come up with more gour-met alternatives of grown-up grilled cheese.  This one has bacon and provolone on onion ciabatta rolls.  It's incredible with Trader Joes Tomato Red Pepper Soup.






Ingredients
ciabatta bread (we used onion)
provolone cheese sliced really thin (Muenster is always amazing--maybe even better than the provolone)
tomatoes sliced really thin
mixed greens
bacon (we used bacon pieces because that's what my man prefers)
dijon mustard
Dukes Mayo
butter 

Make your sandwich using all the ingredients above.  Lightly coat a grill pan with butter and grill sandwich a few minutes on each side until the cheese is melted and the bread is crispy.
