I've mentioned before that I'm a big fan of rotisserie chicken. It's just so easy to make dinner when main ingredient is already cooked for you. Before we moved last year that was pretty much the only meat we ate. But our closest grocery store doesn't have the best looking birds so I drive to a different grocery store once a week and try to load up on organic chicken breasts and a rotisserie while I'm there. I now almost always bake double what I need for a night so we always have some leftovers to make dinner easier on the second night.
I thought I'd round up some of my favorite things to do with baked or grilled chicken in the summer. All of these recipes are just as good, if not better, with leftover chicken. I've tried all of them time and again with different seasoned chicken and it always turns out good. I actually suggest using these as your standard next day dinner recipes. If you do a baked chicken with your favorite sides one night, make one of these the next night!

We love BBQ chicken pizza in our house! I get the dough from the bakery section of our grocery store to make it feel homemade! The pasta looks amazing too!
